Artichoke Pesto Pasta

Artichoke Pesto Pasta

Ingredients

  • 1 box Penne pasta noodles
  • 20 Small round yellow tomatoes
  • 1/3 cup artichokes
  • 1/3 cup pinenuts
  • 1 Medium lemon ((will be using the juice only))
  • salt & pepper, to taste
  • Kirkland No-Salt Seasoning, to taste
  • 1/4 cup olive oil
  • 8 cubes basil (frozen)
  • 6 cubes garlic (frozen)
  • 2 handfuls fresh spinach

Optional

  • Campari tomatoes (chopped)
  • fresh basil (chopped)

Directions

Step 1
Boil noodles in salted water until thoroughly cooked.
Step 2
While noodles are cooking, process artichokes, pinenuts, lemon, salt & pepper, seasoning, olive oil, basil cubes, and garlic cubes in food processor until smooth.
Step 3
Drain pasta and return to pan.
Step 4
Mix pasta with artichoke pesto, and salt and pepper to taste.
Step 5
Add in yellow tomatoes and 2 handfuls of fresh spinach (and chopped up Campari tomatoes and fresh basil, if desired).
Step 6
Mix well then heat for 5 minutes. All done!
