Ready in 15 minutes, these vegan ceviche tostadas with heart of palm and avocado are light, fresh and tangy, delicious for a quick breafast or a light lunch!

I use pre-cooked potatoes to make lightening fast meals, like this onion, potato and cilantro breakfast skillet served with salsa

Add tomato, onion, lime juice, cilantro, dulse flakes, jalapeño, salt and pepper to a medium-large bowl and stir it.

Gently stir in the heart of palm and avocado taking care not to crush it.

Taste and adjust if necessary, then serve on tostadas of your choice!
