Creamy and savory, this conchiglie pasta in cauliflower béchamel sauce with kale and corn is as yummy as it is healthy.

Kale is surprisingly delicious in pasta. If you're not a fan of kale on it's own, give it a try with pasta. You might be surprised.

Start making the sauce first by boiling some cauliflower until it's fork tender, then putting in the blender.

While the cauliflower is boiling, boil some well-salted water and cook the pasta according to instructions.

Then, when the pasta has 2 minutes left to cook, put the kale and the corn in with the pasta, cooking it with the pasta.

When the cauliflower is done boiling, put it in the blender along with some spices.

Once you've drained all the water, put the pasta and veggies back in the pot.
