Chickpea Vegetable Stew over Couscous

Hearty and warm, this easy chickpea stew with tomatoes, zucchini, bell peppers, onions, garlic olives and capers is a cozy, healthy meal.

Let’s get started!

I make this in the Instant Pot (throw everything in and do something else!) if I'm short on time for a weeknight dinner. Otherwise, it's easy to whip up in my dutch oven on the stove.

Saute onions and garlic

If they start to stick, add a tablespoon of water to the pan.

Add the bell peppers and cook them for a few minutes.

Add zucchini/yellow squash and cook 5 minutes

Season with salt and pepper.

Add tomatoes, chickpeas, olives, capers. Stir and simmer to heat through. Taste and adjust seasonings.
