Indian Saag Paneer (dairy-free, vegan)

Bake cubed tofu (this is your dairy-free "paneer" replacement)

Dry roast cumin seeds in dutch oven, stockpot or Instant Pot

Add onions and sauté along with cumin seeds until translucent

Add tomatoes, garlic, ginger, garam masala, turmeric and cayenne

Stir in almond milk to deglaze pan

Add spinach, cashew cream, salt and pepper. Cook until heated through. Blend with immersion blender, if desired.

What can I use instead of dairy cream in curries?

01 Cashew cream is the best substitute. It's thick, creamy and holds up to heat.

02 Store-bought vegan sour cream, cream cheese or plain yogurt

03 Full-fat coconut milk holds up to heat, but adds sweetness and is high in fat

04 Silken tofu that has been blended smooth

Stir in baked tofu to saag paneer. Heat through. Serve over basmati rice with extra cashew cream on top.
