Sweet and tangy, this dressing is perfect for a grain and kale salad, but goes well with many salad combos. The oil-free option is great if you're looking for a low-fat homemade dressing.

Add maple syrup, dijon mustard, apple cider vinegar, sea salt and white pepper to a large glass measuring cup or medium bowl. Whisk to combine.
½ cup maple syrup, 2 tablespoons dijon mustard, 2 tablespoons apple cider vinegar, 1 teaspoon sea salt, ⅛ teaspoon white pepper
Measure out ¾ cup aquafaba (the reserved chickpea water) into a large glass measuring cup or small bowl. If you don't have enough aquafaba, add oil or water until you have ¾ cup total. If using oil, just measure out ¾ cup.

To the dressing, slowly pour in oil (or aquafaba) while whisking until you have a smooth emulsified dressing.
Serve right away or store in an airtight container in the refrigerator for up to 1 week.
