- 1 cup romaine lettuce chopped
- 1 cup cucumber sliced
- ½ avocado cubed
- 2 tablespoons pepitas
Creamy French Dressing (vegan, oil-free)
- 1 tablespoon vegan, oil-free mayo or olive oil
- 1 tablespoon ketchup
- 1 tablespoon light agave nectar or other sweetener
- 1 teaspoon white vinegar
- ⅛ teaspoon sea salt
- pinch onion powder
Instructions

- To make the dressing, combine mayo (or oil), ketchup, agave, vinegar, sea salt and onion powder in a small jar or bowl.
