This easy homemade 3-ingredient pumpkin spice simple syrup recipe without pumpkin puree is vegan and refined sugar-free. Perfect for making homemade PSL (pumpkin spice latte), kid's pumpkin spice steamer, syrup for pancakes or waffles or to top your fall oatmeal!
Whisk all ingredients together in a small saucepan and heat over medium heat, whisking frequently to prevent burning.
1 ½ cup coconut sugar, 1 tablespoon pumpkin pie spice, ¾ cup water
Simmer for 3-5 minutes to dissolve the sugar and slightly thicken the mixture.
Remove from heat and allow to cool.

COCONUT SUGAR SUBSTITUTE:Instead of coconut sugar, you can substitute brown sugar (but, then it will not be refined sugar free).HOMEMADE PUMPKIN SPICE LATTE:Add 1-2 tablespoons of pumpkin spice syrup for 8 ounces of plant-based milk, coffee or prepared latte.
