Boil water in an electric kettle or on the stove in a kettle or pan.
2 cups boiling water
Add strainer to quart-size mason jar (or tea pot), then pour in the loose leaf tea. Pour in boiling water, filling jar half full. Set jar aside to steep for 5-10 minutes.
1 ½ tablespoons rooibos tea leaves
Remove strainer and discard tea leaves. Pour in cool water. Serve over ice. Or, refrigerate, covered, for up to 5 days.
2 cups cool water
Notes
If you don't have a long enough tea strainer, then you can steep the tea in the jar loose. Then, when it's done steeping, you'll need to strain it out with a fine mesh strainer or a smaller tea strainer held over another container.
