These blackberry overnight oats are a variation on our vegan basic overnight oats recipe for those of us who can't get enough blackberries.
🧄 Very useful ingredient notes
- Blackberries - fresh blackberries are sweet and tart. They're a delicious topping or mix-in for overnight oats. Frozen blackberries are even better, in my opinion, though. They are already washed, which saves you time. Just throw them in the jar. Plus, they keep a long time in the freezer. You don't have to worry about using them quickly, like with fresh berries. And, when the blackberry juice thaws, it is so delicious! It flavors and sweetens the oats for you.
- Blackberry jam - Instead of sugar or maple syrup, we're going for double blackberry flavor by using a bit of blackberry jam to sweeten our oats.
- Old-fashioned rolled oats - Use old-fashioned rolled oatmeal for this recipe. I don't like quick oats for this, because it gets too mushy for my taste. Don't use steel cut either, since they don't get soft enough overnight, they really need to be cooked to enjoy them.
- Plant-based milk - any vegan milk you enjoy should work here, like almond milk (pictured), soy milk, oat milk, coconut milk, cashew milk and rice milk. You can use unsweetened or sweetened original or vanilla milk varieties.
- Ground flaxseed - Flax helps to thicken the oatmeal.
- Plant-based yogurt - The yogurt makes the oats more thick and creamy.
📋 Substitutions and variations
Here are some suitable substitution options for the ingredients:
- Blackberry jam - Instead of blackberry jam, sweeten your blackberry oats with maple syrup, agave nectar or sugar. Or, just skip it.
- Flax - use chia seeds instead of ground flaxseed. If you skip either flax or chia, your overnight oats will be thinner.
Here are some variation ideas:
- Blackberry Pecan - add chopped pecans to the oats
- Blackberry Pie - use premium blackberry pie filling instead of jam and fresh berries for blackberry pie overnight oats
- Mixed Berry - used frozen mixed berry or three berry blend instead of only blackberries
