Skip the drive-thru altogether and make your own Jack in the Box tacos with juse 5 ingredients (save for water and oil). They are delicious, meatless (because honestly Jack's tacos are mostly soy anyway) and freezable.
🧄 Very useful ingredient notes

- Soy chorizo - Trader Joe's makes excellent soy chorizo. It tastes better than the real stuff, in my opinion. And, not as greasy as other soy chorizo options I've tried. We're going to use half a package for this recipe. Use the other half to make potato chorizo tacos or choriqueso another day this week!
- Refried beans - Buy vegetarian or fat free refried beans to avoid lard (animal fat). I'm using the fat free refried beans from Aldi.
- Non-dairy cheese slices - Grab your favorite non-dairy sliced cheese, in a cheddar or American style flavor. I'm using H-E-B Healthy Harvest brand - it melts nice and tastes great! Good Planet and Chao are also great store-bought options.
- Corn tortillas - Soft, standard-sized corn tortillas in either white (pictured) or yellow corn will work.
- Shredded iceberg lettuce - Grab a bag of pre-shredded iceberg lettuce to skip chopping your own. Otherwise, you'll use about ⅓ head of iceberg for this recipe.

Here's how to make homemade vegan Jack in the Box tacos step-by-step!

- Step 1: Cook the chorizo in a skillet.

- Step 2: Then, mix in the refried beans and water and cook until hot. Turn off the heat.

- Step 3: Heat a griddle, oil it, then lay tortillas in a single layer. Let cook about 20-30 seconds, then flip. Add a couple tablespoons of filling to each tortilla, off center, but away from the edge, so it doesn't squish out.

- Step 4: Add a piece of cheese to each taco.

- Step 5: Fold tortillas over to make tacos.

- Step 6: Add tacos to air fryer basket in a single layer. (If you wanna save some for later, at this step, you can let them cool, then freeze them in a freezer bag.)

- Step 7: Air fry at 400℉ for 5-6 minutes.

- Step 8: Crunchy and golden out of the air fryer, with melty cheese.

- Step 9: Open to add hot sauce and lettuce.

- Step 10: Serve hot right away!
Expert Tips
- Definitely have everything out, ready to go for this recipe. Cut the cheese slices first and set them aside. Get your air fryer basket ready to go. This recipe goes fast once you've got the tortillas on the griddle.
- Use a large griddle (I'm using a Lodge cast iron griddle) if you have one, so you can cook at least four tortillas at a time.
- Don't use shredded cheese, if you can help it. It makes a big mess on the griddle and slows down the process. Slices are the way to go.
What to serve with Jack in the Box tacos
Hot sauce and lettuce are a given. To take it to the next level, add some cashew sour cream or avocado.
Esquites (Mexican street corn in a cup) would be delicious and is easy to make ahead of time. Some pico de gallo would add some freshness to these indulgent tacos.
Topo chico or sparkling water with lime wedges would be a refreshing drink to wash it all down.

Are Jack in the Box tacos vegan?
No, they aren't. They do contain soy, but also contain beef. Here's the list ingredients from their website:

🥡 Make ahead and storage tips
Once you've filled the tacos, but before you air fry or bake them, you can set them aside to cool. Once they're cool, place them in a freezer bag or airtight container in the freezer or refrigerator.
Once you're ready to eat them, pop them in the air fryer for 5-6 minutes at 400℉ and enjoy!

Vegan Jack in the Box Tacos (Only 5 Ingredients)

- 3 tablespoons oil divided
- ½ package soy chorizo 6 oz. - I used ½ package of Trader Joe's soy chorizo.
- 15 ounces canned refried beans
- 3 tablespoons water
- 20 corn tortillas
- 10 slices non-dairy cheese cut in half, to make 20 triangles
- 3 cups iceberg lettuce shredded (1 bag of pre-shredded lettuce or about ⅓ of a head of lettuce)
Instructions
- Preheat oven to 425℉, if baking tacos. If using air fryer, skip this step.
- Heat a medium pan over medium heat. Add 1 teaspoon of oil and the chorizo. Stir to break up the chorizo and stir-fry for about 2 minutes.3 tablespoons oil, ½ package soy chorizo
- Add refried beans and water to the chorizo. Mix together and heat for 2-3 minutes. Then, turn off heat.15 ounces canned refried beans, 3 tablespoons water
- Heat a flat griddle or wide skillet over medium heat for 2 minutes or until hot. Brush 2 teaspoons of the oil over the griddle. Then, add tortillas, without overlapping them. After 30 seconds, flip tortillas. Immediately add 2 tablespoons filling and one triangle of cheese to each tortilla. Fold tortilla, so it's a half-moon shape, lightly pressing to distribute the filling inside. (If meal prepping these, let them cool on a rack, then freeze.)20 corn tortillas, 10 slices non-dairy cheese
- Repeat until all the filling is gone, oiling the griddle between every 1-2 batches.
- Transfer tacos to air fryer basket in a single layer. Air fry for 5-6 minutes at 400℉. If using the oven, bake at 425℉ for 8-10 minutes, until edges are crunchy.
