🧄 Ingredient notes
- White whole wheat flour - If you can find it, white whole wheat flour keeps it whole grain, but doesn't make the bread as dense and dark as using standard whole wheat flour. If you can't find it, then use all-purpose flour or a combo of AP flour and whole wheat.
- Apple sauce - This is your oil/butter substitute to keep the bread moist!
- Apple cider vinegar - This, along with the baking soda, helps the bread to rise without eggs.

Here's how to make banana nut bread without eggs, dairy or oil step-by-step!
- Step 1: Mash the bananas with a potato masher or fork.
- Step 2: Sift or whisk together flour, baking soda, cinnamon, allspice and salt.
- Step 3: In a small cup, mix together the almond milk and apple cider vinegar. Let sit for 2 minutes to curdle. (this is your vegan buttermilk)
- Step 4: In the bowl with the mashed bananas, whisk in the apple sauce, brown sugar, cane sugar, curdled almond milk and vanilla.
- Step 5: Add the wet ingredients to the dry. Mix well with a wooden spoon. Stir in chopped walnuts.
- Step 6: Pour batter into bread pan. Lightly press walnut halves on top. Bake for an hour to an hour and 10 minutes or until a butter knife inserted in the center comes out clean.
Expert Tips
- Don't worry if the bread takes longer to bake than you think it should. Vegan quick breads usually do. So, just keep baking it until a toothpick or dry knife inserted in the center comes out mostly clean.

- 3 very ripe bananas mashed well, 400-425g
- 2 cups white whole wheat flour 330g
- ½ teaspoon baking soda 3g
- 1 teaspoon cinnamon 2g
- ¼ teaspoon allspice
- ½ teaspoon salt 2g
- ¼ cup almond milk 60g
- 1 teaspoon apple cider vinegar 5g
- ½ cup brown sugar packed, 95g
- ½ cup cane sugar 115g
- ½ cup apple sauce 125g
- 2 teaspoons vanilla extract 10g
- ½ cup walnuts chopped, 65g
- ¼ cup walnut halves for top
Instructions
- Preheat oven to 350°F. Use a non-stick 8×4 inch bread pan or line a bread pan with parchment paper. (I use the pampered chef stoneware bread pans and the bread always comes out glorious and does not stick. No need to grease the pan.)
