🔪 Instructions
Here's how to make pico step-by-step!
- Step 1: Mince the onions (try to get them pretty small, but still intact - we don't want to crush them). A sharp knife, like the santoku knife I use, is your best friend here! Add them to the bowl.
- Step 2: Quarter the cherry tomatoes. If they are really large, cut each one into more pieces. Add them to the bowl with the onion.
- Step 3: Cut limes in half and juice them straight into the bowl with a citrus juicer or your hands. Season with salt and black pepper.
- Step 4: Mince the fresh cilantro and add it to the bowl.
- Step 5: Deseed and mince jalapeño pepper. Wear gloves, if you'd like to prevent burning your skin.
- Step 6: Mix it thoroughly. Taste and adjust seasonings, as needed. Serve with chips!
For baked tortilla chips, see if you can find Tatemada chips. I can find them at Whole Foods and Central Market and they come in blue corn or yellow corn.

Cherry Tomato Red Onion Pico de Gallo Salsa

Ingredients
- 2 cups fresh cherry tomatoes quartered
- 1 ½ cup red onion minced
- 1 small bunch fresh cilantro stems removed and minced
- 1 jalapeño deseeded and minced
- Juice of 2 limes
- sea salt and black pepper to taste
Instructions
- Combine all prepared ingredients in a medium bowl. Add salt and pepper, to taste.2 cups fresh cherry tomatoes, 1 ½ cup red onion, 1 small bunch fresh cilantro, 1 jalapeño, Juice of 2 limes, sea salt and black pepper
- Taste with a chip, if you're serving as a dip, so you don't oversalt it. You might have to add a little more lime juice or a little more salt and pepper. If it's too sharp with onion, add another ½ cup of diced tomato.
- Serve at room temperature or chilled.
