Tostadas are great for summertime since it requires minimal, if any, heating up of the stove or oven. They're also a hit when entertaining. Spread a tostada buffet of toppings and let everyone make their own!

🧄 Ingredient notes
For basic avocado tostadas, the only ingredients you'll need are:
- tostada shells
- store-bought: look for baked tostada shells, which are prepared with no or very little oil
- make your own baked tostada shells without oil in the air fryer or oven
- avocados or guacamole
- refried black beans
- store-bought: look for a can that says vegetarian and/or fat-free, as traditional refried beans are made with lard or oil
- make your own refried black beans using a can of black beans and some spices
- sea salt and black pepper
- fresh lime juice
For dressed up avocado tostadas, you'll need these ingredients to top them with:
- shredded lettuce
- cherry tomatoes
- vegan sour cream (cashew cream is my favorite) or chipotle crema
- thinly sliced red onion or quick pickled onions
- prepared tofu scramble

Making avocado tostadas are really a matter of assembly, especially for the basic versions with guac and sliced avocado. They are super quick and easy to make!

Guacamole Tostadas
Simple Version: Prepared guacamole on tostada shells
Dress it up: Guacamole tostada topped with tofu scramble, vegan sour cream
How to make quick guacamole:
Mash an avocado with lemon or lime juice, salt and pepper, to taste. Optionally, add diced tomato, jalapeño peppers, onion and garlic.
Sliced Avocado Tostadas
Simple: arrange avocado slices on tostada shell and sprinkle with salt, black pepper and fresh lime juice.
Dress it up: Top with shredded lettuce, thinly sliced red onion or quick pickled onions and vegan sour cream.
Black Bean and Sliced Avocado Tostadas
Simple: Hot refried black beans and sliced avocado on tostada shells, sprinkled with salt, black pepper and fresh lime juice.
Dress it up: Top with diced cherry tomatoes, vegan sour cream

Easy Vegan Avocado Tostadas, 3 Ways
Ingredients
Guacamole Tostadas
- 1 cup guacamole
- 3 tostada shells store-bought or homemade
Sliced Avocado Tostadas
- 1 avocado sliced
- 3 tostada shells store-bought or homemade
- sea salt to taste
- black pepper freshly cracked, to taste
- lime juice freshly squeezed
Black Bean and Sliced Avocado Tostadas
- 15 ounces canned refried black beans vegetarian, fat-free (or homemade)
- 1 avocado sliced
- 3 tostada shells store-bought or homemade
- sea salt to taste
- black pepper freshly cracked, to taste
- lime juice freshly squeezed
Optional Toppings
- 2 cups shredded lettuce
- ½ cup cherry tomatoes quartered
- ¼ cup quick pickled onions drained
- ¼ cup vegan sour cream cashew cream
- 2 cups prepared tofu scramble
Instructions
Guacamole Tostadas
- Divide prepared guacamole across 3 tostada shells. Serve as is or dress it up.1 cup guacamole, 3 tostada shells

Sliced Avocado Tostadas
- How to slice an avocado: Use a knife to cut the avocado into two pieces lengthwise, rotating the avocado as you cut. Then, twist the avocado to separate the two pieces. Carefully strike the avocado pit with the knife (keep your hand/fingers safe and out of the way!), rotate the pit with the knife in it, then pull the pit out and throw it away. Use the tip of the knife to gently cut slices in each avocado half lengthwise. Then, use a spoon to scoop out the avocado slices from the peel.1 avocado
- Divide sliced avocado onto tostada shells. Sprinkle with salt and black pepper and fresh lime juice. Serve as is or dress it up.3 tostada shells, sea salt, black pepper, lime juice
- Dress it up: Add shredded lettuce, quick pickled onions and vegan sour cream.
Black Bean and Sliced Avocado Tostadas
- Heat refried black beans on stove in a small saucepan over medium-low heat, stirring frequently until hot. Remove from heat. Or, transfer refried black beans to a microwave-safe glass bowl and heat in microwave for 1 minute. Stir, then heat for 30 seconds at a time, stopping to stir, until hot.15 ounces canned refried black beans
- Spread hot refried black beans on tostada shells. Add sliced avocado on top. Sprinkle with salt and black pepper and fresh lime juice. Serve as is or dress it up.1 avocado, 3 tostada shells, sea salt, black pepper, lime juice
- Dress it up: Add diced cherry tomatoes and vegan sour cream.
