I know, I know, it feels like sacrilege to make Greek salad dressing without using olive oil. But, it is possible! And, still delicious.
My husband positively LOVES Greek salad and will gladly eat a huge bowl of it. So, I made this dressing to complement my vegan Greek salad with tofu feta recipe.
Let's keep those beautiful Greek tastes, like red wine vinegar and Greek oregano to differentiate and flavor the dressing.
If you use olive oil, feel free to use it instead of the water to make this dressing.

- Red wine vinegar - a sweet, rose-colored vinegar made from fermented red wine. It has a distinctive taste that is important in creating an authentic-tasting Greek salad dressing. It's one of vinegars that's pretty easy to find in a standard grocery store.
- Oregano - use a Greek dried oregano, if you can. Otherwise, a standard oregano will work. I would not recommend using Mexican oregano, since it's flavor is a little different.
- Dijon mustard - This helps emulsify and thicken the dressing. I prefer the Whole Foods 365 Dijon Mustard, since it's mild and not overly strong.
- Agave nectar - A neutral-tasting liquid sweetener to lightly sweeten and balance the dressing. Use sugar, if you'd prefer.

Here's how to make Greek salad dressing (oil-free) step-by-step!

- Step 1: Add all the ingredients to a bowl or glass measuring cup.

- Step 2: Whisk vigorously to combine and emulsify. Taste and then adjust ingredients, if needed. Pour over salad or refrigerate for later!

Expert Tips
- Definitely taste it by dunking a piece of lettuce in the mixed dressing. If it's too tangy, add a little more water. If it's too sweet, add a little more vinegar, water or salt.
- Don't skip the water - it needs a neutral liquid (like oil or water) to tame the acidity in the vinegar.

Greek Salad Dressing (oil-free)
Equipment

Ingredients
- ยผ cup red wine vinegar
- 2 tablespoons water or olive oil
- 1 tablespoon dijon mustard
- 1 tablespoon agave or sugar
- 1 clove garlic crushed
- 1 teaspoon dried oregano
- ยผ teaspoon sea salt
- โ teaspoon freshly ground black pepper
Instructions
- Add vinegar, water (or olive oil), dijon mustard, agave (or sugar), garlic, salt and black pepper to a bowl or cup. Using a fork or small whisk, whisk the dressing together until everything is incorporated.ยผ cup red wine vinegar, 2 tablespoons water, 1 tablespoon dijon mustard, 1 tablespoon agave, 1 clove garlic, ยผ teaspoon sea salt, โ teaspoon freshly ground black pepper, 1 teaspoon dried oregano
- Pour dressing over salad and toss everything together with tongs or salad forks. Or, store in an airtight container in the refrigerator for 1-2 weeks.
