Eggplant is one of those vegetables that divides the room. Like okra.
I, for one, like eggplant, especially if it's breaded in eggplant parmesan or turned into baked eggplant meatballs.
This roasted BBQ eggplant is really easy to throw together and adds in that smoky sweet BBQ sauce that I drizzle on anything I can. If you're a fan of BBQ flavors, give this vegetable side dish a try!
Serve it with mashed potatoes for a light dinner. Or, serve it as a veggie side at your next barbeque.
๐ง Very useful ingredient notes

- Eggplant - Use Italian eggplant for this recipe. Long, skinny Asian eggplant would work also, but you would need about 3 of them. Do not use the small, Indian eggplants for this recipe, they won't get tender with this method of cooking.
- BBQ sauce - I love a sweet, thick BBQ sauce (just like my Daddy made!) I buy it at Aldi. But, use the BBQ sauce that you like the taste of the most. There's tons of options out there!
- Smoked paprika - Adds depth of flavor and smokiness. When shopping, look for smoked sweet paprika from Spain or Hungary - they make the best!

Here's how to make roasted BBQ eggplant and onion step-by-step!

- Step 1: Pre-heat oven to 400ยฐF. Add cut onion to medium-large bowl.

- Step 2: Cut eggplant into planks lengthwise. Then, cut the planks lengthwise into strips (as you see in the picture). Lastly, cut across the strips so you get cubes of eggplant. Add to the bowl.

- Step 3: Sprinkle all the spices into the bowl.

- Step 4: Pour in the BBQ sauce.

- Step 5: Stir everything together until the pieces are well coated.

- Step 6: Line a sheet pan with parchment paper and spread the eggplant and onions on the sheet pan in a single layer.

- Step 7: Roast in the hot oven for 20 minutes. Meanwhile, make the mashed potatoes (for serving). After 20 minutes baking, remove from oven with oven mitts and stir. Return the pan to the oven and roast another 10 minutes or until eggplant is browned and tender.

- Step 8: Remove from oven. Mix together BBQ sauce and water for the drizzle and microwave for 15 seconds to heat. Serve by spreading a layer of hot mashed potatoes on the bottom of your plates. Add BBQ eggplant/onion on top. Drizzle thinned out BBQ sauce on top. Serve immediately!
Expert Tips
- Keep the eggplant pieces the same size, so they cook evenly.
- Definitely line your sheet pan, because the sweet BBQ sauce will stick otherwise.

Roasted BBQ Eggplant and Onion with Mashed Potatoes

- 1 Italian eggplant top trimmed and cut into 2-inch cubes
- ยฝ large yellow onion cut into 1 inch pieces
- ยผ cup BBQ sauce plus more for drizzling
- ยผ teaspoon sea salt
- ยผ teaspoon black pepper
- ยฝ teaspoon smoked paprika
- ยฝ teaspoon granulated garlic
For drizzle
- 2 tablespoons BBQ sauce
- 2 teaspoons water
For serving
- prepared mashed potatoes homemade or instant
Instructions
