Poke bowls can be as simple and classic as rice + cucumber + avocado. Or, you can get fancy with watermelon poke, tofu poke and pickled radishes.
The sky's the limit! Here's some ideas to get you started.
How to build a vegan poke bowl
- Step 1: Start with a bed of cooked sushi rice. You could also add some salad, like the spring mix I have here.
- Step 2: Then top with your favorite veggies and plant-based protein.
- Step 3: Lastly, serve with a dressing and seaweed snacks!
- Step 4: Fill the seaweed snacks with rice and toppings, cupped in your fingers.
- Step 5: Close it up and enjoy the perfect bite!
- Step 6: Or, mix everything together and eat like a rice bowl.
Expert tips
- Include a crunchy element, like cucumber, grated carrot, spring mix or sweet bell pepper.
- Include a creamy element, like avocado, tofu or sweet potato.
- Always include a seaweed element, like seaweed snacks, cut nori or furikake seasoning (get one that doesn't have fish in it).
- Don't be afraid to get sweet. Fruit like mandarin oranges (yes, even the ones in the little cups), watermelon and mango are delicious in poke bowls!
- Don't forget the pickles, like pickled beets, pickled radish or kimchi for a tangy addition.
- Lastly, make it colorful! Purple cabbage is striking against the white rice and green cucumber. And, pickled beets give it a beautiful pink hue.

Go classic with cucumber & avocado or mix and match to find your favorite combination.

🍉 How to make watermelon taste like vegan poke tuna
If you are adventurous and have a little time to get fancy, then try marinating watermelon to mimic spicy tuna for your vegan poke bowl.
- Cut watermelon into small cubes
- Marinate for at least 30 minutes in soy sauce, rice vinegar, sriracha and honey (or other sweetener).
- Eat raw/cold after marinating OR...
- Bake / air fry until it reaches desired texture. (When I tested this both ways, I preferred the texture of the baked watermelon after it had cooled.)
Poke bowl dressings
Super simple
This is perfect for when you don't have a lot of time to make a dressing. Or, you don't have all the ingredients you need.
To make it: Soy sauce + seasoned rice vinegar, to taste.
Sweet soy ginger
This is our go-to poke bowl dressing. It has all the flavors you get when you eat sushi: soy sauce, ginger, wasabi, sesame seeds and more.

Spicy mayo
Creamy with the heat of sriracha.
To make it: Mix a teaspoon of sriracha and a couple drops of toasted sesame oil to prepared vegan mayo for a spicy sushi mayo.
